This is my first time collecting seeds from something I grew myself. Hopefully they’ll sprout next spring and turn into awesome onions! It’s pretty cool to think that one plant can make so many seeds that have the potential for turning into whole other plants that in turn can make many more seeds and thus plants (etc. etc.). Crazy! Plus, this was an onion that sprouted from the store and started getting mushy so I effectively got these seeds for free, since I would’ve otherwise just thrown that mushy bulb away. Bonus onions!

Maybe you’d enjoy starting a compost pile for your leftover veggies so you have some nice fertilizer for the off season. I used to have an indoor one in a giant Tupperware filled with worms and newspaper. an outdoor one would work if it’s covered well.
Our neighbors have one that I just throw stuff into.
